No Bake Chocolate Peanut Butter Brownies

I love experimenting! Faddish or not, it creates excitement. We all need an injection of fun in an otherwise boring week. Just like in relationships, we need to keep evolving to stay present. This recipe was my first venture into Paleo dessert. I can’t believe how easy it is to make these until I tried it, and even better to know that they are healthy and tasty too. Never been a fan of dates but when blended with nuts and chocolates, it miraculously transformed into DILE (Dates I Like to Eat)!

Its Paleo, Vegan, Vegetarian, Gluten and Lactose Free.

No Bake Chocolate Peanut Butter Brownies


  • 2.5 cups Medjool dates (remove pits)
  • 1 cup almond /walnut
  • 1/2 cup nut of choice (this recipe I used cashew)
  • 1/4 cup plus 2 tbsp cocoa or cacao powder
  • 1/4 cup 80% chocolate chips (optional)
  • 1/4 tsp salt
  • 1 1/2 teaspoon vanilla essence
  • 2 tsp water
  • 1/4 cup nut butter of choice
  • 2 tbsp milk of choice (we used almond)
  • 2 tsp maple syrup or algave syrup
  • 1/4 cup dark chocolate, melted for drizzling on top (optional)
  • Dried cranberries for decoration
  • Dried roses for decoration


  1. Blend all the brownie ingredients together in a heavy duty processor. You will see it come together, as the dates get processed and the mixture gets stickier.
  2. Pour into a square pan, using a parchment paper, press the mixture down and flat with the palm of your hand.
  3. Prepare peanut butter icing but mixing all ingredients together till you get a spreading consistency. Spread icing on top of brownie.
  4. If using melted chocolate, drizzle it on top of the peanut butter, create wavy patterns!
  5. Optional but you may decorate with dried cranberries and roses.
  6. Refrigerate for at least 2-3 hours.
  7. Cut into bite sized squares or bars.

Additional Info

For maximum taste and texture results, refrigerate for at least 2 hours or overnight! You can substitute the nuts and seeds with your nuts/seeds of choice!
