Flo's Beer, Orange & Organic Honey Chicken

Yields: 1 -2

Ingredients

  • 1 chicken breast, whole
  • 1 tbsp chopped lemongrass
  • 1 tbsp chopped ginger
  • 1 tbsp orange peel
  • 200ml beer of choice
  • 1 tbsp Melaya organic honey
  • Salt & pepper to taste
  • 1 zip lock bag
  • Chopped chili - optional
  • Salad of choice: Bokchoy, Chili and Orange slices, grilled to serve

Method:

  1. Marinade chicken breast with salt and pepper, massage in gently. Place chicken into the bag with a can of beer. Press excess air out of bag, seal it tightly. Refrigerate for 1 - 2 hours or overnight.
  2. Pound or blend ginger and lemongrass together into a rough paste. Add orange peel, pound further to release the orange peel oil. Set paste aside.
  3. Remove chicken breast from the beer marinade. Massage the ginger orange paste on both sides of the chicken breast.
  4. Set grill at medium high heat. Drizzle chicken with some oil. Place chicken on the griller. Sear and turn chicken on both sides until cooked through. About 8-10 minutes. If you like, you can also grill some bok choy, chili and orange slices along side. They make a great salad accompaniment for the chicken.
  5. Remove chicken and vegetables. Set aside covered with foil for at least 10 minutes to rest.
  6. Slice chicken breast diagonally. Sprinkle chopped chili on top, if using. Drizzle a tablespoon of Melaya Honey before serving. Simple, great tasting clean healthy food!
